Harvesting Leeks

The best and the worst thing about leeks is the time of year that they are ready to harvest.

Even in the worst of winters the leeks continue to grow and shrug off the worst that nature throws at them. And then, in the middle of the bleak winter, the leeks are ready to harvest, providing fresh vegetables when nothing else is growing.

The flip side is that in order to harvest the leeks you need to go out into that harsh winter weather. But it’s worth the effort. So wrap up warm and harvest those little miracles.
