Harvesting rocket lettuce

The great thing about Rocket Lettuce is that you can harvest it as individual leaves.  Simply cut 1 or 2 leaves of each plant and in a few days time each plant will have grown additional leaves.  Harvesting this way means that your rocket plants will keep producing for a few months. 

Rocket is not a great fan of heat.  If it gets too much or if its roots dry out a little then it will bolt.  Bolting means that it will start to flower.  If this happens you will see stems starting to grow up from the base of the plant.

But don’t panic.  You can stop your rocket growing out of control and taking over your raised bed by regularly harvesting the stems.  The leaves and flowers can all be eaten.
